Wyoming Cowboy Cookies
The recipe was brought to my attention and it amused me. What coconut and pecans
have to do with Wyoming and Cowboys, I'll never know. Nonetheless, here is the recipe
if you want it, for cookies which are apparently quite popular with cowboys in Wyoming.
Ingredients:
- 1 c flaked coconut
- 3/4 c chopped pecans
- 1 c butter or margarine - softened
- 1 1/2 c packed brown sugar
- 1/2 c sugar
- 2 eggs
- 2 c all-purpose flour
- 1 ts baking soda
- 1/2 ts salt
- 1 1/2 ts vanilla extract
- 2 c rolled oats
- 2 c (12 oz.) chocolate chips
Instructions:
- Place coconut and pecans on a jelly roll pan and then place it in a 350oF oven
for 6-8 minutes (or until toasted brown) stirring every 2 minutes.
- Set the pan aside to cool.
- In a large mixing bowl, cream butter and sugars.
- Add eggs and beat well.
- Add dry ingredients and vanilla.
- Stir in oats, chocolate chips and toasted coconut and pecans.
- Drop by rounded teaspoonfuls onto greased cookie sheets.
- Bake at 350oF for about 12 minutes or until browned.

Wyoming Cowboy Beans
Now this one, to me, sounds like something a cowboy would really eat.
Ingredients:
- 2 c white beans, soaked and cooked (or 2 cans of white Northern beans)
- 1 c diced ham
- 1 small onion, chopped
Instructions:
- Mix all ingredients together in a sauce pan
- Simmer
- Do not drain canned beans. This should be thick.
